I have a confession: I’m addicted to green juice. It’s so fresh and healthy – nothing tops it. I usually have my juice in the morning, in a big Mason jar. It’s delicious. Here’s my favorite recipe:
- 4 large celery stalks
- 1 cucumber
- 1/2 a lime (peel the outside but leave the white pith – it’s good for you)
- 1 apple or pear
- Handful fresh parsley or cilantro
- 2 Kale leaves
Cut everything into chunks that your juicer will like. Run everything through the juicer, finishing with the celery. Stir to combine, and sip slowly. I usually throw a few ice cubes in there.
Note: You can make juice ahead of time, but try to do so within twelve hours of consumption. Also, store the juice in an airtight jar and fill it up to the tippy-top so no air gets in. This preserves all the live enzymes and phytonutrients – which is what makes juice so healthy.
